Is it just me or does anyone else sometimes feel like any gym workout besides the big 3 is kinda pointless?

Certainly not pointless, but everyone would no doubt benefit the most to center their workouts around those movements (injuries excused). If your goal has anything at all to do with muscle and strength, you need to be doing the big 3. If you are injury-free and capable of pressing, squatting, and deadlifting then do it. End of story.
